On the French theme….


……picked up this lovely lentil pate recipe from http://lachattegitane.blogspot.co.uk, and amended slightly for my own tastes, good hot or cold. I found it good hot mixed with chopped, fried Quorn bacon pieces, on a baked potato.  My mother likes it as a post-chemotherapy session snack, with a mini pork-pie and cucumber (each to their own, serious illness or not!).

Large onion, chopped
2 cloves of garlic, finely chopped
150 gr red lentils
1 tablespoon curry powder
Vegetable stock
I tablespoon marmite
25 gram breadcrumbs
Salt and pepper

Cook garlic and onion lightly in oil for a minute or so. Add the lentils and curry powder, stir and sautée for another minute. Add the stock and marmite, then cover and let simmer for about 30 minutes, until most of the liquid has been absorbed. Make sure the mixture isn’t too dry though, as it will go more biscuit-like than pate-like during baking.  Mix in breadcrumbs, salt and pepper then pour the mixture into an oiled ovendish and brush top with olive oil. Bake for 45 minutes in a preheated oven 200°C.  Excellent on bread with butter, or with salad such as tomato and cucumber (always a good pairing for red lentils), or as above. Makes several servings.
