Either way, put down the salt, lemon and lime (time), for what I’ve seen described a few times as a “tortilla” but would probably call, in my UK-centric way, a tarted-up omelette. It is quite delicious, and works well as a hot dish, or cold stuffed into a lunch box with a dash of pesto and some salad for the day after. Ode to Jose, the curse of Cuervo….
Small onion, chopped
Clove garlic, chopped
Large potato, chopped into chunks
Half a large courgette, sliced into thin circles
Milk, or soy milk
Teaspoon of thyme or basil
Salt and pepper
Pour a thin layer of vegetable or olive oil into a large frying pan, and heat.
Add the onion, potato and garlic, season well.
Cook for 15 minutes, then add the courgette and cook for another 10.
Pre-heat the grill.
Mix the egg, milk and herb, and pour evenly over the mixture in the frying pan.
Cook on the hob until the underside is firm, then stick the pan under the grill to cook the top half.
Cut and serve.
