Out to lunch


My herbs have grown! Look at their little faces leaves!


I decided to swipe a little coriander and finely chop it to go in the below recipe for spiced lentils, from this rather lovely blog (and thank you to http://www.vedgedout.com for bringing Inpursuit… to my attention!):



Added a little extra chopped carrot and some spring onion to the mix; when mashed into a smooth paste, this will be joining some tomato and a little low-fat mayo, wrapped inside soft corn-flour tortillas. That’s lunch sorted for the next couple of days.

Now for dinner…..
