Don’t have the time right now or the emotional focus to write the post that deserves to go with the title, so I’ll leave you with this stir-fried vegetable, soft cheese and pancake burrito instead, from http://thriftylesley.com/. It’s a little oil and carbohydrate-heavy so not perhaps not ideal for the waistline-conscious, but if you’re looking for tasty, cheap, quick and seriously rib-sticking then you could do far worse…..
Pancakes and vegetables mid-cook.
Finished burritos packed for lunch tomorrow.
Half white onion, chopped finely
Half a carrot, likewise
Decent handful sweetcorn
Half courgette, chopped finely
Salt and pepper
Half pack soft cheese
Gently sauté the onion and carrot in a wok, then add the sweetcorn and courgette. Gently fry until tender, salt and pepper to taste. Allow to cool, then mix in the soft cheese.
Mix the flour, water, mustard and black pepper and combine to a thin batter.
Heat a thin slick of oil in a frying pan and pour on some batter (go easy on both the amounts of batter and the amount of oil).
The pancake will cook quickly. Flip over and fry the other side, then transfer to a plate and gently pat with kitchen towel to remove excess oil.
Allow to cool slightly, then add the vegetable and cheese mixture and roll into burritos.
