Was back at work for one day after the four day bank holiday, but now have the rest of the week off.
Slept in till midday, then celebrated my slothful lifestyle with a late breakfast of spicy omelette in garlic and coriander naan bread….
Half a small green chilli, deseeded and chopped finely
One clove garlic, chopped finely
Cumin and coriander
One large egg, beaten with a little salt
Small coriander and garlic naan
Margarine, vegetable oil
Take the naan out of its packaging and then grill in the oven according to package instructions. Take out and cut widthways (I’ve found scissors better for this than a knife). Butter with the margarine (or with butter!).
In a large frying pan, heat some vegetable oil, then gently fry the garlic and chilli. Add the cumin and coriander and fry briefly.
Pour over the egg, to form a thin omelette. Fry and then flip and fry, until golden on both sides.
Place inside the naan. Eat.
