Was woken up at around 7.30am by an enormous crack of thunder, followed by the scent and sound of heavy rain.  I retreated deeply under the duvet and stayed there, occasionally poking out a big toe to see if the temperature had increased.

Eventually was forced to surface so I could go to the gym and run a few other errands, but the weather has continued Miserable, with a Side-order of Heavy Precipitation.  Fortunately I spotted just the antidote over at http://zaatarandquinoa.com/2014/03/23/red-curry-lentil-soup/comment-page-1/, which also conveniently put paid to a quarter jar of Balti curry paste that was lurking menacingly at the back of the fridge…..


Red Lentil Curry Soup

Red lentils

Two cloves garlic, chopped

Half white onion, chopped

Hot vegetable stock

1/4 jar Balti curry paste

Small packet coconut cream

Tin tomatoes



Place all the ingredients in a wok, with plenty of stock for the lentils to absorb.

Bring to the boil, then cover and simmer for 40 minutes or until lentils are soft.

Serve ideally with naan bread and some plain yogurt to counteract the spicyness of the Balti paste.  However if you’ve been a bit disorganised like me and forgotten to buy either, you’ll fold a couple of wholemeal tortillas up and use them as an edible shovel instead, and just neck a load of water against the burn!
