The weather is gradually improving, with the sun throwing out genuine waves of heat inbetween the slowly-lessening showers. Got out of the gym in time to field a phone call from Dad – BBQ on Sunday! Time to hit the EnormoAsda and stock up on the veggie burgers. Sunburn season approaches, and by Dog its long overdue!
Was starving after the gym, and there was only a little bit of the noodle soup from yesterday left over, so after I scarfed it I hit the fridge again, craving a summery hit of peas, mint and feta. This delicious soup certainly delivered…..

Pea, Mint and Feta SoupHalf a large potato, peeled and chopped small Bowl defrosted frozen peas 4 small spring onions, peeled and chopped One clove garlic, chopped Vegetable stock Half a pack of feta, cubed Lemon Juice Pinch of sugar Mint Salt and pepper
Stick Exile on Main Street on again.
Heat the stock in a pan and add the potatoes, spring onion and garlic. Bring to the boil and then simmer until the potato is soft.
You can leave it chunky, mash the a potato a little with a masher to give it more texture, or briefly transfer to a food mixer and blend if you want it really smooth.
Add the peas, sugar, mint, dash of lemon juice, salt and pepper. Simmer for a few minutes.
Add the cheese, simmer for a minute or so more (not too long, you want the cheese to retain its shape).
