Beetroot & Chickpea Fritters


One for the lunchbox, with some salad, soft white cheese and brown bread.

Chickpea & Beetroot Fritters

Tin chickpeas, drained

Two cooked beetroot, drained and sliced into chunks

Dash of cumin

Dash of salt

Couple tablespoonfuls of plain flour

Olive oil


Mash the beetroot, chickpeas, cumin, flour and salt.  Form into small burgers.

Heat the oil in a frying pan or wok, and fry each burger, flipping occasionally.  Serve hot, or cold with a salad.
