Chickpea & Beetroot Fritters
Tin chickpeas, drained
Two cooked beetroot, drained and sliced into chunks
Dash of cumin
Dash of salt
Couple tablespoonfuls of plain flour
Mash the beetroot, chickpeas, cumin, flour and salt. Form into small burgers.
Heat the oil in a frying pan or wok, and fry each burger, flipping occasionally. Serve hot, or cold with a salad.
