Picked up this vegan tacos recipe from the ever-lovely Deena Kakaya. No flatbreads or wraps left, but it did pretty well crammed into a wholemeal pitta instead. That’s breakfast for tomorrow sorted, then….
Tofu, Broccoli & Cauliflower Tacos
Half pack firm tofu, cubed
Paprika, turmeric, garam masala, ginger, coriander, chilli, cumin, salt
Generous dollop tomato puree
One large clove of garlic, minced
Pack of cauliflower and broccoli florets
Boil a pan of water, and add paprika, turmeric and the cauliflower/broccoli. Simmer for 3-5 minutes. Drain and leave to cool.
Mix the rest of the spices, garlic, salt and puree, and coat the tofu and cauliflower/broccoli with the mix. Leave in the fridge for an hour or so to marinate.
Pour the mix into a baking tray and bake at 200degrees for 10-15 minutes in the oven. Shovel into the bread wrapper of your choice and eat.
