Frittata, it Makes me Happy


So we had the TimeTravelling Buffet of Doom on Saturday, then a street party on the Sunday.  What better contribution to both, than a quiche?

Unless of course you’re too bloody lazy to sort out the whole “pastry” bit, in which case, what better than a frittata or two?

Feta, Courgette & Red Pepper Frittata

Half a white onion, chopped
One red pepper, chopped
One clove garlic, minced
1/3 pack feta, crumbled
Thyme, black pepper, salt
3 eggs, beaten
Half a courgette, sliced widthways
Olive oil


Pre-heat the oven to 190 degrees.  Lightly oil a roasting tin.

Heat olive oil in a wok, gently fry the onions, then add the garlic, peppers and thyme and salt.  Cook for 5-10 mins more.

Pour into the tin.  Stud with feta cheese pieces.

Add black pepper to the eggs.  Pour the egg mixture over the veg and cheese.

Bake in the oven for 15-20 minutes.

Serve hot or cold.


Quorn Ham & Cheddar Frittata

3 spring onions, chopped
Spoonful margarine or butter
1/3 pack mild cheddar
Half pack Quorn ham, chopped
3 eggs, beaten
Salt and black pepper
1/2 courgette, chopped widthways
Vegetable oil

Place the ham under a grill, and cook until hints of browning.

Fry the spring onion and courgette in the vegetable oil for a few minutes.  Add salt and black pepper.

Melt the margarine/butter and add to the egg.

Layer the ham, onion and courgette in a baking dish.  Add the cheddar pieces and pour over the egg and margarine mix.

Bake in the oven for 20 minutes.
