Potato, Brie & Cabbage Bake


Official first day of Autumn.  UNLEASH THE COMFORT FOOD…..!!



Potato, Brie & Cabbage Bake

Half a sweetheart cabbage, sliced into thick strips (Sainsbury’s had run out of Savoy)
Two medium baking potatoes, sliced widthways thinly
Olive oil (or butter / margarine)
A small round brie cheese
Salt and pepper


Preheat the oven to 200degrees.

In separate saucepans, heat lightly salted water to boiling.

Add the potato to one, and cabbage to the other.  Cook for 5 minutes.

Drain, rinse in cold water, and pat the cabbage and potato dry with kitchen towel.

Grease a roasting tin, and layer the ingredients as follows: potato, salt and pepper plus a dash of oil, cabbage, brie, salt and pepper plus a dash of oil, then potato and brie + dash of oil.

Cover with foil and bake in the oven for 20 minutes.  Uncover, and bake for another 5.

Serve hot.
