Chestnut Roast

Turns out that, with Mum gone, I’m the only person in the family who actually eats roast chestnuts with Xmas dinner.  So the post-dinner clear-out of leftovers gave me a good 2/3rds of a tin of lovingly pre-roasted chestnuts to play with.  Mixed with finely chopped mushrooms and a few other ingredients, these made a cracking nut roast, as I’m sure Scrat would agree…

Vegetable Stew with Cheesy Herby Dumplings

Officially work starts at 8.30am, but in some kind of group telepathic reaction to the grey skies and perma-twilight most people rolled in late today, looking like the fight between Being a Responsible Working Adult and Waaarrrmmm Duvet had been a very close-run thing. Got home with a serious craving for vegetable stew with dumplings.  Ten minutes on google search pulled up this economical, flexible and rib-sticking little gem.  Now you must excuse me whilst I go back to the pot and ladle out a second helping…. *belches*

Pancakarama

Sorry about the gap in posts.  Busy at work, plus a stinking cold, plus the run-up to the one-year anniversary of my mother’s passing, has left me reaching for the tried-and-trusted rather than the new-and-shiny.  I’ve developed an ongoing throat issue as well which I’m trying to manage by cutting out alcohol, spicy and acidic foods for a couple of weeks (argghh) and as much caffeine as I can remove without becoming an active danger to other people (HULK NEED LATTE. HULK SMASH).  Which has narrowed my options a little.  But what’s the point of having a cookery blog if it doesn’t give you a ready-made and handy back-catalogue of tasty dishes?  So I took another shot at this herby mushroom pancake, this time with feta, spinach and potato as the stuffing….
