Stilton & Red Onion Toad-in-the-Hole

One of the joys of the Xmas period is the sheer weight of cheese that supermarkets whip out, often at tempting prices.  My latest acquisition is half a wheel of Stilton for £4, most of it now in the freezer.  I did hack off a decent lump though, for this sizzling, filling toad-in-the-hole recipe…..

Stilton & Red Onion Toad in the Hole

One red onion, chopped into chunks

Pack vegetarian sausages

Half pint skimmed milk

One egg

Around 100g flour

Salt

Vegetable oil

Decent wedge Stilton

Tea spoon of mustard powder

 

Wipe an oven dish with vegetable oil, and bake the sausages and onion in the oven at medium heat for 10-15 minutes.

Mix the flour, milk, egg, mustard and salt and whisk until it forms a thin batter.

Take the oven dish out of the oven, and pour over the batter.  Dot the dish with pieces of Stilton.

Bake in the oven for 40 minutes.
