Rice Noodle & Vegetable Bake

A good, cheap 3-days-until-payday bake, using store cupboard staples (particularly relevant for January, the Official Month of 3-Days Till Payday).  Nothing too sophisticated but moreish and goes down well with a spot of ketchup!

Noodle & Vegetable Bake

Clear onion soup (I made from scratch with garlic, chopped white onions, salt, pepper and vegetable stock), but use tinned or powdered if that’s what you have to hand.

Chopped veg (I used a handful of button mushrooms in this case)

Thin rice noodles

Soy sauce

Handful rice (I used white basmati)

 

For the onion soup, heat veg or olive oil in a wok, and add the garlic and onion.  Simmer gently for 20 minutes.  Add salt, pepper and hot vegetable stock, and bring to the boil then simmer for another 15.  Alternatively mix up and heat the pre-prepared onion soup if that’s what you are using.

Heat the oven to medium high.

Melt some margarine or butter in a saucepan and add the dry noodles.  Stir for a minute or so.

In a casserole dish mix the soup, noodles, rice, veg and soy sauce.  Cover the dish with a lid or foil.

Bake in the oven for 25 minutes, take out and check moisture levels in the dish.  Add a little more veg stock if necessary.

Bake for another 10/15 minutes, uncovered.  Serve hot.
