Pesto Tofu

Nice simple one here, for Thems Wot Has Busy Days (job interview on Thursday, wish me luck!).

Pesto Tofu

  • Half a block of firm tofu, drained and pressed for 30 minutes
  • Two spring onions, chopped finely
  • 1/3 jar red pesto (or other pesto)
  • Olive oil
  • Cous cous (I used corn, rather than wheat based cous cous, which is a) gluten free for them’s wot care about these things b) has got a slightly richer flavour than the wheat version in my opinion).  Alternatively use rice, quinoa, bulgur wheat or your other grain of preference.

 

Put on “Stand” by REM.

Chop the tofu into cubes.

Cook the cous cous or other grains as per packet instructions.

Meanwhile, heat olive oil on a high heat, and saute the spring onions.

Add the tofu cubes, cook until golden.

Add the pesto and stir through till heated.

Serve the tofu with the cous cous on the side.
