Peanut & Vegetable Noodles


Fast, spicy, and stuffed with nut protein, vegetables and whole-wheat carbohydrates.  Should be available on prescription as the perfect balanced meal….

Nutty Noodles

  • Tablespoon peanut butter (or nut butter of choice)
  • Handful cashews
  • One leek, peeled and sliced widthways
  • One carrot, sliced finely
  • One pepper, sliced finely
  • Medium wholewheat noodles
  • Vegetable oil
  • Soy sauce
  • Lemon juice
  • Coriander and cayenne
  • One garlic clove, minced

Mix the garlic, spices, nut butter, lemon juice, soy with a little hot water, and leave on the stove to reduce to a thick sauce.  Stir as necessary.

Heat a saucepan of water, and add the veg.  Simmer for a few minutes with a little salt.

Add the noodles, and cook as per packet instructions.

Drain the veg and noodles, pour over the peanut sauce and mix.  Scatter the cashews over.  Scarf it down in a most unladylike way with a mix of chopsticks and fork, and the tablecloth be damned!
