….nothing glamorous, but cheap, cheerful, and very enjoyable with some crusty bread and, perhaps, the very merest sprinkling of grated cheese, Red Leicester for preference….?
Vegetable and Lentil Soup
- Two leeks, chopped
- One large carrot, chopped
- Two celery sticks, chopped
- One white onion, chopped
- Two cloves garlic, chopped
- One baking potato, chopped finely
- Generous handful red lentils
- Arse-end bit of courgette, chopped
- Hot vegetable stock
- Salt and black pepper
- Olive oil
- Plain flour
Chuck a generous glug of olive oil in a wok or saucepan. Heat gently and add the onion and garlic. Allow to cook gently until transparent.
Add the veg (except the potato), and stir. Mix in a couple of tablespoons of plain flour and cook for a minute or so.
Add the stock, potato, lentils and generous amount of salt and black pepper. Bring to the boil, place on the lid, and simmer for 30 minutes, or until lentils and potatoes soft. Serve hot.
