A Fool and His Medals

Felt like a serious Sunday brunch was required, and a random post in a newspaper…..

…. sparked off a sudden desire for shakshuka/huevos rancheros, which when at home is known as “eggs with spicy tomato stuff”, a recipe I’ve explored previously on a number of occasions, only this time with beans involved.  I understand that traditional Middle-Eastern preference is for fava beans (the humble broad bean to us Brits), but I compromised with what’s actually in the cupboard, and chucked in a can of cannellini beans instead.  Whilst you’re waiting for yours to cook, check out this Wikipedia entry on Fuls Medames, a common Middle-Eastern breakfast.  Now let’s be honest, does this not look way cooler and more nourishing than a bowl of Frosties….?

Carrot & Spinach Dhal

Standard

Okay, I admit that this isn’t the prettiest dish you’ll ever throw into a bowl, but, it’s as comforting and warming as a bowl of porridge with treacle (treacle!), only with the vitamins and iron of carrot & spinach, and the protein of that faithful old standby, red lentils.   The left overs are even better the next day, chucked in a dish to reheat in the oven, with an egg cracked over them halfway through to bake:

Turkish Yogurt Soup

If cheap noodles don’t do it for you, then this luxuriously rich, herby soup might hit the spot instead.  It’s again composed mostly of store cupboard staples, and a little of this soup goes a long way (*belches*), but if you’re still cash-conscious you could probably get away with leaving out the falafels/meatballs; the rice and chickpeas will still make a pretty solid bowlful.

Thanks go to my sister for this, as my access to The Interwebs had crashed and she had to google it and read out the details of the recipe over the phone….!

Pancakarama

Sorry about the gap in posts.  Busy at work, plus a stinking cold, plus the run-up to the one-year anniversary of my mother’s passing, has left me reaching for the tried-and-trusted rather than the new-and-shiny.  I’ve developed an ongoing throat issue as well which I’m trying to manage by cutting out alcohol, spicy and acidic foods for a couple of weeks (argghh) and as much caffeine as I can remove without becoming an active danger to other people (HULK NEED LATTE. HULK SMASH).  Which has narrowed my options a little.  But what’s the point of having a cookery blog if it doesn’t give you a ready-made and handy back-catalogue of tasty dishes?  So I took another shot at this herby mushroom pancake, this time with feta, spinach and potato as the stuffing….

Breakfast Egg Muffins

This gets heavy on the eggs very quickly, so not good for those a on a budget, but still, a handy way to use up spare bits of veg and cheese etc, or if you need breakfast on the run, or if you’re just sick of Sugarpuffs….
