A Fool and His Medals

Felt like a serious Sunday brunch was required, and a random post in a newspaper…..

…. sparked off a sudden desire for shakshuka/huevos rancheros, which when at home is known as “eggs with spicy tomato stuff”, a recipe I’ve explored previously on a number of occasions, only this time with beans involved.  I understand that traditional Middle-Eastern preference is for fava beans (the humble broad bean to us Brits), but I compromised with what’s actually in the cupboard, and chucked in a can of cannellini beans instead.  Whilst you’re waiting for yours to cook, check out this Wikipedia entry on Fuls Medames, a common Middle-Eastern breakfast.  Now let’s be honest, does this not look way cooler and more nourishing than a bowl of Frosties….?

Carrot & Spinach Dhal

Okay, I admit that this isn’t the prettiest dish you’ll ever throw into a bowl, but, it’s as comforting and warming as a bowl of porridge with treacle (treacle!), only with the vitamins and iron of carrot & spinach, and the protein of that faithful old standby, red lentils.   The left overs are even better the next day, chucked in a dish to reheat in the oven, with an egg cracked over them halfway through to bake:

Right.  First week of January (“The Worst Week of the Year”(TM)), is now over, so it’s time to get back to the gym to start fixing the ankle I busted  in November*, and cut right down on the lattes, alcohol, cheeses and delicious delicious oils (Chilli! Olive! Sesame! Mustard!) that make the Anxious life so enjoyable.  The recipe below has helped soften the blow, by being warm and tasty and filling and spicy whilst impeccably healthy and protein-heavy.  Enjoy!

One hour back

A wet, grey, humid day spent mostly on buses back and forth across Tangleton; vegetables from Tesco, and two new pairs of jeans from the giant Asda store, as my summer ones, cropped to mid-calf, are being rapidly superseded by the season.  Tonight the clocks go back, and we gain an hour’s extra sleep; poor reward for the months of darkness that will follow.

But autumn isn’t all doom and gloom.  “Strictly Come Dancing” is upon us, as is Halloween with its cheap plastic thrills and pretend horror.  I and my sister have carefully procured the tackiest corpse bride puppets, fake pumpkins and plastic skeletal hands that Poundland can provide, to decorate Mum’s grave up at the Tangleton Crematorium*

Another benefit of the season is the vegetables; potatoes, swedes, parsnips, leeks, savoy cabbages, sweetheart cabbages and other tough leaves of the soil, that can be roasted, stir fried or stewed into delicious green submission.  Today I picked up a bag of kale for a very moreish, pleasantly spicy black-eyed bean stew (the leftover leaves go to my nephew’s guinea pigs, the little furry eating machines that they are).

Original recipe to be found here.  I’d not heard of Anna Jones before, and nicely-spoken young ladies releasing nicely-spoken recipe books full of nicely-spoken organic, free-range, quinoa-esque recipes, are kind of ten a penny these days.  However, this is a bit of a winner of a stew……

Vegetable Stew with Cheesy Herby Dumplings

Officially work starts at 8.30am, but in some kind of group telepathic reaction to the grey skies and perma-twilight most people rolled in late today, looking like the fight between Being a Responsible Working Adult and Waaarrrmmm Duvet had been a very close-run thing. Got home with a serious craving for vegetable stew with dumplings.  Ten minutes on google search pulled up this economical, flexible and rib-sticking little gem.  Now you must excuse me whilst I go back to the pot and ladle out a second helping…. *belches*

Pea, Dhal & Mushroom Curry

I suppose I feel obliged to comment on That Photo by Kim Kardashian; to whit, I’m reminded I need somewhere new to park my mountain bike.

Saturday dinner was tasty homity pie and breaded mushrooms at the lovely Jekyll & Hyde pub, Home of the Yes You Have More Than One Vegetarian Option and they ALL look taaaasty menu.  Sunday was Whatsleftoftheauberginechilli on toast, then a 45 minute walk at a brisk trot to the EnormoAsda, as I needed the ingredients for a Fattoush salad for Sunday dinner at Dad’s.  Also picked up some ‘shrooms for this highly spicy mushroom curry.

Moong Dhal – the Cure

Work is full of sick people, and it doesn’t help that because our heating system is old and dodgy the entire office is kept at a standard temperature more usually associated with tropical islands, dusky maidens in grass skirts and strategically-placed half-coconut shells etc etc.

I’m nursing an eyelid cyst along with everything else, and began to get serious cravings for spinach and dark leaved vegetables last week.  Figuring that my body knows what it needs, I indulged it with spinach frittata / sweetheart cabbage & brie bake / red lentil & spinach curry, but apparently this wasn’t enough to stave off illness, as I woke this morning with a sore throat and headache.

Phoned in sick and slept through till 1pm.  Ate the last of the spinach frittata. Found some whisky at the back of the drinks cabinet and had a hot toddy with honey*.  Then fired up this creamy moong lentil dhal, which apparently is a popular recipe with the convalescent and sick in India….
