Veggies in parmesan sauce
Now to be fair to Yotam Ottolenghi, I think I’d quite enjoy eating at his restaurants Nopi or Ottolenghi.  However,  his recipes as published in the media are well complicated, and I don’t have any more space in my cupboards for any more exotic ingredients.  So below is a simplified version of one published recently, but still tasty and versatile, and a good way to get your five a day into you!

Spring Clean

…well that’s the spring clean of the flat 95% done – just need to scrub the hob and clean the fridge, then no housework for another 12 months LOL.

You know, they had me at “comfort-food”.

Was alerted to the existence of this dish via the The Guardian. Apparently the Korean equivalent of Bubble & Squeak, i.e a good user-up of left-over rice and other meat and vegetable dishes, which is something I’m also a real sucker for.

(I don’t create left-overs. I create dishes with the sole intention of providing left-overs which can then be converted into the proper meal I was intending to create all along).

In Which I Dice with Death

Work continues stressful. I toyed with booking a massage to try and unkink the muscle knots in my back and neck, although the poor masseuse might have more luck with a hammer and chisel than with, say, lavender oil.

But in the meantime here’s a classic bit of veggie cooking, and a great clearer of odds-and-ends; the vegetable and bean stew. Perfect summer-fare (when a fine June day in the UK has consisted of heavy rain and lashing winds, and guess who forgot her nice warm fleece this morning?).

Apologies for the hiatus in posting, the glut of recipes over the past few days meant I had more leftovers than I have meals in the day to eat said leftovers. And I draw the line at aubergine bake for breakfast (call me unadventurous if you will). Especially when the local Big Supermarket is doing low-fat vegetarian sausages for a pound a pack. Wholemeal bun, tomato, low-fat mayo and grilled sausage – sausage buttie for breakfast, the healthier way!

Having cleared a little space in the freezer, I decided to clear out some of the odds and ends from the fridge, and what better way than a nice casserole? This is a bit of a rib-sticker; bookmark it for next autumn when the chill starts to set in, your belly will thank you for it….
