Veggies in parmesan sauce

Veggies in parmesan sauce
Now to be fair to Yotam Ottolenghi, I think I’d quite enjoy eating at his restaurants Nopi or Ottolenghi.  However,  his recipes as published in the media are well complicated, and I don’t have any more space in my cupboards for any more exotic ingredients.  So below is a simplified version of one published recently, but still tasty and versatile, and a good way to get your five a day into you!
(Regrettably no photo until I locate my camera USB cable 😦   ) UPDATE:foounndd ittt!

Turkish Yogurt Soup

Standard

If cheap noodles don’t do it for you, then this luxuriously rich, herby soup might hit the spot instead.  It’s again composed mostly of store cupboard staples, and a little of this soup goes a long way (*belches*), but if you’re still cash-conscious you could probably get away with leaving out the falafels/meatballs; the rice and chickpeas will still make a pretty solid bowlful.

Thanks go to my sister for this, as my access to The Interwebs had crashed and she had to google it and read out the details of the recipe over the phone….!

Lentil, Bulgur Wheat, Paprika & Mint Soup

Standard

Between overtime at work and various other stuff it’s likely to be busy this week, so decided to knock up this tasty lentil soup.  Between this, the biryani rice, and a pack of defrosted mini-naans I should be well sorted dinner-wise for the week ahead….

Baby, Won’t You Keep Me Happy

Standard

The weather is gradually improving, with the sun throwing out genuine waves of heat inbetween the slowly-lessening showers.  Got out of the gym in time to field a phone call from Dad – BBQ on Sunday! Time to hit the EnormoAsda and stock up on the veggie burgers.  Sunburn season approaches, and by Dog its long overdue!

Was starving after the gym, and there was only a little bit of the noodle soup from yesterday left over, so after I scarfed it I hit the fridge again, craving a summery hit of peas, mint and feta.  This delicious soup certainly delivered…..
