Rice Noodle & Vegetable Bake

Standard

A good, cheap 3-days-until-payday bake, using store cupboard staples (particularly relevant for January, the Official Month of 3-Days Till Payday).  Nothing too sophisticated but moreish and goes down well with a spot of ketchup!

FATFAL Noodles

1) RIP Rik Mayall

2) Spent Monday off work sick, and the rest of the week playing catch-up.  Tired, narked, tired-narked and thoroughly tarked-noff.   Fortunately found this recipe, which, even if you’re not hungover, ticks the boxes of quick, convenient, tasty and pleasingly messy to eat.  F**k All This For a Laugh Noodles, if you will….

Tired, run-down, and in no great hurry to get out of bed this morning and see what the Forces of Heck have planned for me today.  Limped home after work in desperate need of something warming, wholesome, light, yet nourishing, that I can cook whilst dancing round the kitchen to Soft Cell’s “Sex Dwarf“, vodka and coke in hand.

Oh look, still got 2/3rds of a jar of miso and ginger paste.  Hmmm….

Settled on a version of the tofu and cabbage soup from the other day https://theanxiouscook.wordpress.com/2014/04/27/ich-will/, only with quorn chicken pieces and carrot slices instead.  Slung the rest of the veg into a Japanese-influenced stir-fry + some cashews for extra protein. Result.

Now, where was I? Oh yes.  “SEX DWARF. ISN’T IT NICE, LURING DISCO DOLLIES TO A LIFE OF VICE……?”

Ich Will

Standard

Oh, it’s raining again.  Oh well, in these situations one can only kick back, turn up the volume on a Kerrang! heavy-metal compilation on the iTunes (hi Rammstein!), and look to yet another comforting soup.

One of the Seven Wonders of Tangleton is the small Cash & Carry/Off-Licence shop hidden behind the White Lion Hotel at the top of the town centre.  Every possible type of flour, spice, herb and lentil that an Anxious can stagger home carrying.  Today’s haul included a huge bottle of soy sauce, coconut cream, two tins chickpeas, zaatar, somaq and chives, for a princely £8.  Unfortunately this frugality was somewhat blown by having to buy miso from the Marks & Sparks Foodhall, as no other bugger in Tangleton appears to stock the stuff.  And even then it is a miso and ginger “recipe” paste, rather than miso paste / firstworldproblems.

Still, mustn’t grumble.  The ginger ended up as quite a nice note in the below soup recipe…..

Spring Clean

Standard

…well that’s the spring clean of the flat 95% done – just need to scrub the hob and clean the fridge, then no housework for another 12 months LOL.

Took a break for a nourishing noodle soup – original can be found here http://inpursuitofmore.com/2014/02/19/10-minute-meal-butternut-squash-ramen-bowl-with-rice-noodles-tofu-fresh-pea-shoots/

Tanglepore Noodles

In my search for that elusive stir-fry hit I’ve moved onto Singapore Noodles, with somewhat more success this time. This recipe incorporates both (yellow-brownish) curry powder and (virulently yellow) turmeric, so those who like to cook/eat whilst wearing white clothing, may wish to look away……..now

Curried Noodle Cakes

I’m reluctant to point you in the direction of http://www.101cookbooks.com/ as it’s such a beautiful vegetarian food blog that you’ll probably de-camp there permanently and I’ll be left shouting hoarsely into the aether about tinned black beans and mortal fear, whilst crickets chirp and tumbleweeds roll.  However mum is particularly fond of this noodle dish, so it’s best that I reacquaint myself with it as her chemo-battered taste buds may well be demanding it later this week.  The original recipe calls for pasta noodles (presumably “spaghetti” to people on this side of the Atlantic?), but I’ve used wheat/rice noodles successfully in the versions I’ve cooked here.
