The Shepherd’s Nuts

Anxious Dad created an absolute masterpiece of a nut roast for Christmas Eve dinner (chestnuts! cheese! artistic cabbage leaf wrapping!).  I returned to Anxious Towers with a decent hunk of the remains, plus a handful of roast chestnuts.  My vegetarian turkey roll and mince-pie lust* having been satiated over the Xmas period, I was in the mood for something comforting and hot, and this shepherd’s pie hit the spot whilst handily using up the leftovers.  I bought the parsnip and carrot fresh, but those with leftover veg, or leftover cheese from a festive cheeseboard, might find a home for them in the recipe as well…..

*A mince-pie and a double vodka with coke is a perfectly acceptable Xmas breakfast, I’ll have you know.  As is another mince-pie.

Now to be fair to Yotam Ottolenghi, I think I’d quite enjoy eating at his restaurants Nopi or Ottolenghi.  However,  his recipes as published in the media are well complicated, and I don’t have any more space in my cupboards for any more exotic ingredients.  So below is a simplified version of one published recently, but still tasty and versatile, and a good way to get your five a day into you!

Pancakarama

Sorry about the gap in posts.  Busy at work, plus a stinking cold, plus the run-up to the one-year anniversary of my mother’s passing, has left me reaching for the tried-and-trusted rather than the new-and-shiny.  I’ve developed an ongoing throat issue as well which I’m trying to manage by cutting out alcohol, spicy and acidic foods for a couple of weeks (argghh) and as much caffeine as I can remove without becoming an active danger to other people (HULK NEED LATTE. HULK SMASH).  Which has narrowed my options a little.  But what’s the point of having a cookery blog if it doesn’t give you a ready-made and handy back-catalogue of tasty dishes?  So I took another shot at this herby mushroom pancake, this time with feta, spinach and potato as the stuffing….

Spiced Potato-Stuffed Peppers

By some frightening piece of Farming Alchemy (Falchemy?), bags of peppers, £1 for a pack of 6, are available at Sainsbury’s.  It’s late November but here they are, fluorescent yellow orange with delicately-applied blushes of green.

Add in two tins of ready-boiled new potatoes for 20p each, and onion and some spices and you have the makings of a cheap, generous and filling dinner.  Several cheap, generous and filling dinners in fact.  Spinach not essential but added as I had some left over from another recipe, and bagged spinach has a lifespan of approximately 8.3 minutes, after you’ve been daft enough to actually open the bag, rather than just admire the leaves through the plastic.

Please note that the amount of potato given in my version of the recipe will likely leave you with a decent margin of spiced potato left over.  Hang on to it, there’s an epic bubble & squeak recipe coming up…….

Brick Red

Confined to Barracks at least means I can take a few minutes to do some minor chores, which includes checking out the freezer compartment of the fridge and seeing if there’s anything that needs dumping/using up.  I found a couple of packets of pre-soaked and boiled black beans and decided to have a go at this potato, black bean and paprika stew….

Lost in a Forest…

Returned to the campsite described in https://theanxiouscook.wordpress.com/2013/08/25/campfire-desserts/ with a few additional friends, more wine, and (sod the firelighters) bags of amazing ready-burn charcoal, just add matches and stand back*. We battled rain, hail, thunder and madly-flailing low-flying pheasants (and that was just the first couple of hours). In return, New Rivendell delivered in full on its promise of campfire BBQs, impossibly-clear starry nights, and the opportunity to perfect your peeing-in-the-woods-at-2am technique.

Back to reality with a massive THWACK!! on Monday morning. My mother has recurring health issues, (which may or may not suggest a secondary cancer is now in situ). We await the results of her meeting with the consultant on Tuesday afternoon. My company is making redundancies, and whilst I think I’m reasonably safe, my manager, who has sweated blood, sweat, tears, bad coffee and fluorescent marker-pen to make this team a success that is recognised and name-checked at the highest levels of the company, is now also in the pool for potential redundancies (there’s gratitude for you). And no, I don’t want her job – do I look feckin’ stupid?
