Apologies for the hiatus in posting, the glut of recipes over the past few days meant I had more leftovers than I have meals in the day to eat said leftovers. And I draw the line at aubergine bake for breakfast (call me unadventurous if you will). Especially when the local Big Supermarket is doing low-fat vegetarian sausages for a pound a pack. Wholemeal bun, tomato, low-fat mayo and grilled sausage – sausage buttie for breakfast, the healthier way!
Having cleared a little space in the freezer, I decided to clear out some of the odds and ends from the fridge, and what better way than a nice casserole? This is a bit of a rib-sticker; bookmark it for next autumn when the chill starts to set in, your belly will thank you for it….
Vegetable Casserole with Dumplings
I can only apologise for the lack of photos on this website, because I know we all enjoy a spot of food-porn. My digital camera is playing up, otherwise I would be happily foisting slightly-out-of-focus shots of radishes on you. Feel free to be grateful, or disappointed, as necessary.
Ah, stuffed peppers. A vegetarian cliche perhaps, but no less tasty for it. In these cost-conscious days as well, a bit of expensive protein bulked out by some grains and veg is always worth consideration.
With the wettest April on record, the wettest June on record, a miserable July and a frankly bikini-hostile August, the garden has done very badly cropwise, presumably because my parents weren’t prescient enough to plant appropriate crops, like rice. And water lilies. And water-cress. And fish. There’s been a decent return on the string beans, garlic, cucumber and some of the cherry tomatoes seem to have begged, borrowed and stolen enough sunlight to finish ripening, but overall it’s been a poor show. The only other plant that seems to have mastered photosynthesis-whilst-underwater has been the humble beetroot, and there are several fat globes of it presiding over the fridge now with their usual “I dare you to eat me whilst wearing white clothes” vibe.
Yesterday saw a fairly thorough clean-out of my food cupboard, and there’s a decent handful of quinoa, a decent handful of bulgar wheat, and some white rice that could do with being mopped up, plus some button mushrooms, so this evening’s attempt at food-poisoning will be a variant on risotto.
