The Shepherd’s Nuts

Standard

Anxious Dad created an absolute masterpiece of a nut roast for Christmas Eve dinner (chestnuts! cheese! artistic cabbage leaf wrapping!).  I returned to Anxious Towers with a decent hunk of the remains, plus a handful of roast chestnuts.  My vegetarian turkey roll and mince-pie lust* having been satiated over the Xmas period, I was in the mood for something comforting and hot, and this shepherd’s pie hit the spot whilst handily using up the leftovers.  I bought the parsnip and carrot fresh, but those with leftover veg, or leftover cheese from a festive cheeseboard, might find a home for them in the recipe as well…..

*A mince-pie and a double vodka with coke is a perfectly acceptable Xmas breakfast, I’ll have you know.  As is another mince-pie.

A Fool and His Medals

Felt like a serious Sunday brunch was required, and a random post in a newspaper…..

https://www.theguardian.com/lifeandstyle/2016/aug/20/family-life-sister-lost-spike-jones-city-slickers-egyptian-shakshuka

…. sparked off a sudden desire for shakshuka/huevos rancheros, which when at home is known as “eggs with spicy tomato stuff”, a recipe I’ve explored previously on a number of occasions, only this time with beans involved.  I understand that traditional Middle-Eastern preference is for fava beans (the humble broad bean to us Brits), but I compromised with what’s actually in the cupboard, and chucked in a can of cannellini beans instead.  Whilst you’re waiting for yours to cook, check out this Wikipedia entry on Fuls Medames, a common Middle-Eastern breakfast.  Now let’s be honest, does this not look way cooler and more nourishing than a bowl of Frosties….?

Roast Cabbage & Sprouts with Parmesan & Smoked Paprika Sauce

Standard

Radio is blaring out Motorhead’s version of Sympathy for the Devil, and I am contemplating the sweetheart cabbage, lying forlornly in the wok wot does double duty as a vegetable bowl.  Nigel Slater to the rescue!  This was tasty and left an decent amount of parmesan sauce that I am scheming how to reuse tomorrow night…..*

*the aubergine tries quietly to sidle under the red onions, unaware that they will share its fate…..mwah hah hah….

Vegetable Stew with Cheesy Herby Dumplings

Standard

Officially work starts at 8.30am, but in some kind of group telepathic reaction to the grey skies and perma-twilight most people rolled in late today, looking like the fight between Being a Responsible Working Adult and Waaarrrmmm Duvet had been a very close-run thing. Got home with a serious craving for vegetable stew with dumplings.  Ten minutes on google search pulled up this economical, flexible and rib-sticking little gem.  Now you must excuse me whilst I go back to the pot and ladle out a second helping…. *belches*

E=Spicy MBubbleC & 2Squeak

As mentioned in the last post, you should have a certain amount of spicy potato mash left over from the stuffed peppers recipe.  By an amazing cosmic coincidence I had some sprouts, 1/3 of a sweetheart cabbage, and a few slices of vegetarian bacon lying around as well.  Onion and garlic are a given in this household, like the kitchen sink, an eclectic music collection, and the large number of 1950s classic sci-fi novels from the Tangleton British Heart Foundation charity shop lying around….*

Saturday night at the sister’s again, another episode of Peter Capaldi’s mad-eyed Dr Who to savour, plus the usual banquet.  Been cooking most of the afternoon; krispy kale with kashews, flatbreads, Quorn ham &  cheese frittata.  Also used up what was left of last night’s chilli con carne in a chilli frittata (tomorrow’s breakfast).  Plus there was an additional Unintentional Frittata, when my attempt at Nigel Slater’s bacon and pea fritters went horribly wrong and I decided to try and rescue the ingredients rather than just dumping them.

(I think I need to buy some more eggs).

Tired, run-down, and in no great hurry to get out of bed this morning and see what the Forces of Heck have planned for me today.  Limped home after work in desperate need of something warming, wholesome, light, yet nourishing, that I can cook whilst dancing round the kitchen to Soft Cell’s “Sex Dwarf“, vodka and coke in hand.

Oh look, still got 2/3rds of a jar of miso and ginger paste.  Hmmm….

Settled on a version of the tofu and cabbage soup from the other day https://theanxiouscook.wordpress.com/2014/04/27/ich-will/, only with quorn chicken pieces and carrot slices instead.  Slung the rest of the veg into a Japanese-influenced stir-fry + some cashews for extra protein. Result.

Now, where was I? Oh yes.  “SEX DWARF. ISN’T IT NICE, LURING DISCO DOLLIES TO A LIFE OF VICE……?”
